Summary
In this chapter, I link environmental sociology scholarship on capitalism and environment to research on environmental justice more specifically. Critical environmental sociology holds that capitalism is predicated on inequalities and that capitalist production and consumption practices create negative environmental consequences.Because these features are fundamental to capitalism, environmental injustices are almost certain to occur.I make the case that capitalism is not necessarily reformable via technological advances and government actions, as suggested by ecological modernization proponents.Government policies often support business and growth and have thus far failed to adequately address environmental inequities. I suggest that critical sociologists should continue to uncover and investigate the legal and financial structures from which corporate actors derive power and continue to demand changes to current economic structures.

Contemporary research on prehispanic Maya landscapes has focused on caves as core features of the cultural geography. Investigations within a number of large caves have suggested that they served as the loci for important rituals, legitimized inhabitants’ claims to their territory, and helped establish the authority of a site’s ruling elite. The ubiquity and centrality of caves in the Maya worldview raises questions about what happened in regions where large caves did not naturally form. Recent investigations at the site of Maax Na in northern Belize suggest that small caves, despite their diminutive size, still functioned to establish legitimacy and uphold power. The results serve to demonstrate the pervasive power of key ideological concepts in shaping the cultural landscape and indicate the need to take these into account in documenting landmarks at Maya sites, as even the less imposing ones may have been important to their inhabitants.

Among the many insects under investigation as potential vectors of the oak wilt fungus in Wisconsin and elsewhere, the species of Pseudopityophthorus have attracted considerable attention. Although recent developments appear to indicate that the long-distance spread of this serious disease occurs primarily with the aid of other insects, our knowledge at present does not warrant the assumption that bark beetles play no part whatever. In the study of P. minutissimus from August, 1952, to the fall of 1953, considerable information concerning its biology in Wisconsin has been brought to light; and regardless of its relationship to the oak wilt problem it seems desirable at this time to make better known this member of the Wisconsin bark beetle fauna.

Relationships between faecal phytate and mineral excretion depend on dietary phytate and age

We investigated the adverse effect of phytate on mineral absorption and the effect of dietary phytate and age on the relationship between faecal phytate and faecal mineral excretion. Fourteen young women (aged 19–24 years) and fourteen elderly women (64–75 years) were studied for two metabolic periods (MP). In MP1, the subjects consumed a controlled high-phytate (HP) diet for 10 d; in MP2, they were on a low-phytate (LP) diet for 10 d. In each period, diet samples and complete faecal samples for 5 d were collected to analyse phytate and mineral contents. Mineral concentrations in diet and faeces were measured by inductively coupled plasma–atomic emission spectrometry. Linear regression analysis was used to examine the associations between faecal phytate and mineral excretion. The degradation rate of dietary phytate was about 77 % for young women, which was significantly lower than that of elderly women (86 %) (P < 0·05). Faecal phytate excretion was positively correlated with mineral excretion (Ca, P, Fe and Zn) in both the HP and LP diet groups in young women (P < 0·05). The linear relationship tended to be greater during the LP diet period compared with the HP diet period in young women. However, no association was found between phytate excretion and mineral excretion in elderly women. In summary, undegraded dietary phytate (10–20 %) had a negative effect on mineral absorption in young women, and the relationship between faecal phytate and mineral excretion was affected by both dietary phytate and age.

Summary
Gender is about power. Norms, traditions, and values concerning gender have served to maintain a system of inequality in virtually every society. From the moment a person is born, the state is involved in upholding and maintaining gender as an institution: Birth certificates always include the sex of the child (typically allowing for only two possibilities), sending a message that this is an important axis of difference. State policies often reflect patriarchal norms and may constrain both men's and women's choices. Yet states also may serve as arenas for challenging traditional gender norms (Gordon, 1990). Feminist political sociologists have called attention to both the gendered impact of state policies and structures and how gender ideologies and gendered social patterns shape politics (Wilson, 1977; Gordon, 1990; Ward, 1990; Orloff, 1993; Bose and Acosta-Belén, 1995).
Feminists tend to view states and state policies with some ambivalence. Although some feminists view the state as an agent of change and use the state to create legislation that may equalize women's and men's opportunities, others view the state as antithetical to feminist goals (MacKinnon, 1989; Sharp and Broomhill, 1988; Brown, 1992). Ambivalence about the role of the state in gendered policies may discourage some types of feminist mobilization (Miller and Razavi, 1998). But as Sainsbury (1999:270) suggests, “Irrespective of whether the state is conceived of as a structure or a terrain, the state is a crucial site in regulating and constructing gender relations. It is too important an arena not to enter because of ideological antipathy or fears of co-option.”
Lymphocyte metallothionein mRNA responds to marginal zinc intake in human volunteers

Marginal Zn deficiency is thought to be prevalent in both developed and developing countries. However, the extent of Zn deficiency is not known, due to the lack of a reliable diagnostic indicator. Blood plasma and erythrocyte concentrations of metallothionein (MT) reflect Zn status, but measurement of MT is dependent on the availability of sensitive immunoassays. Our aim was to show whether measurement of T lymphocyte MT-2A mRNA, using a competitive reverse transcriptase (RT)–polymerase chain reaction (PCR) assay, could indicate Zn status in human subjects in a residential Zn-depletion study. In the study, the Zn intake of seven volunteers was maintained at 13·7 mg/d for 5 weeks (baseline) followed by 4·6 mg/d for 10 weeks (marginal intake) and then 13·7 mg/d (repletion) for 5 weeks. The quantitative assay was developed using standard techniques and concentrations of MT-2A mRNA were normalized by reference to β-actin mRNA which was also measured by competitive RT–PCR assay. An alternative method of measuring the PCR product using capillary electrophoresis with laser-induced fluorescence detection was also evaluated. There was considerable inter-individual variation in MT-2A mRNA concentration and the mean level at the end of the baseline period was 10·3 (SE 3·7) fg MT-2A mRNA/pg β-actin mRNA, which then decreased by 64 % during the low Zn intake period. After repletion, MT-2A mRNA returned to baseline concentrations. In contrast, plasma Zn was unchanged by marginal Zn intake or repletion. The effect of low Zn in all individuals was consistent. We conclude that this assay is a sensitive method of evaluating marginal changes in dietary Zn intake.

The physiological importance and mechanism of the postprandial fall in plasma Zn concentration is not well understood. In order to gain further information on this apparent redistribution of plasma Zn, a stable isotope, 70Zn, was used to study the effect of a breakfast meal on plasma Zn kinetics. Nine women participated in two trials, a fasting trial and a breakfast-meal trial; five of the women participated in a third trial in which the energy content of the breakfast meal was doubled. At each trial, 0.1mg of 70Zn was infused intravenously, and the plasma disappearance of the isotope was analysed using a two-compartment model of Zn kinetics. Plasma Zn concentration fell significantly following the two trials in which the subjects were given meals, reaching low points that were 13 and 19 %, respectively, below concentrations at comparable times during the fasting trial. Kinetic analysis revealed that after the doubled breakfast meal there was a significant fall (P < 0.007) in the size of the most rapidly turning over Zn pool (pool (a)) from 2.90 (se 0.13)mg in the fasting state to 2.47 (se 0.14) mg postprandially. The fractional turnover rate of pool (a) to other extravascular Zn pools, i.e. outside the two-compartment system, was also significantly elevated after the doubled breakfast meal (P < 0.05). These results suggest that the decline in plasma Zn concentration following a meal is due to a redistribution of Zn from the plasma to other more slowly turning over extravascular pools that may be involved in the assimilation and metabolism of fuels following food intake.
