The alkali-induced elimination of phosphate from β-casein

Summary

The dephosphorylation of β-casein, type A1, by dilute aqueous solutions of sodium hydroxide has been studied. It has been found that the mechanism whereby inorganic phosphate is liberated by the action of alkali is one of β-elimination from O-phosphoserine residues which are themselves converted initially to dehydroalanyl residues.
