Using an interpretative comparison in search for cross-case similarities and differences, we examine the evolution of equity of access to healthcare during the economic crisis in two potentially vulnerable Eastern and Southern European countries – Lithuania and Spain. While the type of healthcare system may have shown higher resilience, i.e. equity of access to care during the crisis should have been affected more in Lithuania – a relatively immature health insurance system – than in Spain – a consolidated national health service, the intensity and length of the crisis and types of adjustment measures undertaken may have led, in turn, to different results in terms of equity of access. The analysis focuses on the respective institutional designs and healthcare reforms under austerity as well as subjective and objective indicators of access to care. We conclude that the Lithuanian healthcare system, despite potential comparative disadvantage, has shown greater performance than the Spanish one during the crisis.

Summary
This chapter analyses the historical evolution of the social policy languages and concepts in Spain. It focuses on the changing meanings of ‘social security’ (seguridad social) and ‘welfare state’ (estado del bienestar) but it also takes into account how entitlements and recipients were defined and how these notions changed over time.
The interest in the Spanish case for analysing the evolution of social policy language is derived precisely from its peculiar historical development. Modern social policy was initiated in Spain in 1900. The development of social insurance followed the Bismarckian model from then until the end of Franco's authoritarian regime in 1975. However, since the advent of democracy, the Spanish social protection system has become a mixed model a la Esping-Andersen (1990); in other words, it has been based on à combination of social democratic, conservative-corporatist, and liberal principles, where policy areas differ with respect to institutional design. For instance, while the income maintenance system remains broadly rooted in Bismarckian principles, health care, education, and, partially, social care services, have been universalised following the social democratic model. The analysis in this chapter focuses on the ways in which social policy language in Spain's various policy areas reflects the influence of the Bismarckian, social democratic and liberal models of welfare capitalism.
The chapter is divided into two main sections. The first section addresses briefly the language used in the origins and early construction of the Spanish social protection system during Franco's dictatorship (1939–75). The second section explores the evolving meanings of ‘social security’ and ‘welfare state’ during the democratic period (1975 to the present). Changes in the historical construction of social policy language were brought about not only because of the advent and consolidation of a democratic regime, but also because of the inclusion of Spain in the European Economic Community in 1986.
Social policy languages: origins and historical construction of the Spanish social protection system
As already stated, the Spanish social protection system was initiated in the late 19th century with a debate grounded on ‘the social question’ (la cuestion social). This constituted a fundamental ideological turning point: people in need should no longer be protected only by charitable bodies and institutions, but the state was to play a direct (but still limited) role in the provision of social protection, understood as a social right.

We have investigated the performance of pension schemes of with-profit policies containing a guaranteed minimum rate of return and we have found that the price of the guarantee measured in terms of lost returns is enormous. We use simple simulations rather than complex pricing methods to illustrate that the price of an interest guarantee is high in pension products that are currently commercialised in the market. We have found that the customer loses up to about 0.75% yearly in the rate of return when an interest guarantee is purchased, compared to the return of an equivalent saving strategy with the same risk at the level 95%. This can explain why such arrangements are not widely popular. Our approach can be used to inform clients, who are not experts in modern financial models, the impact of paying for an interest guarantee.

Høgh, Linton and Nielsen (2006) showed that the famous result in the award winning paper of Froot and Stein (1998) is not correct in the sense that their result does not follow from their assumptions. In this paper we show that the economic intuition behind the paper of Froot and Stein (1998) is correct and that their result can be obtained when the market is reformulated in a continuous time setting and modern market theory is employed.

Effect of recombinant chymosin on ewes' milk coagulation and Manchego cheese characteristics

Ewes' milk coagulation was significantly influenced by the type of rennet when recombinant chymosin produced by Kluyveromyces lactis was compared with two commercial calf rennets with declared chymosin contents of 55 and 70%. Recombinant chymosin and calf rennet with 70% chymosin exhibited similar thrombelastographic characteristics, and coagulated milk more rapidly than calf rennet with 55% chymosin. The type of rennet had no effect on Manchego cheese dry matter, pH or recovery of dry matter in cheese. N soluble at pH 4·6 was the only N fraction influenced by the type of rennet, with slightly higher levels for cheese made with recombinant chymosin or with calf rennet containing 70% chymosin than for that made with rennet containing 55% chymosin. No significant differences in rheological or sensory characteristics between Manchego cheese made with recombinant chymosin and that made with the calf rennets were detected.
