An investigation of consumers’ use of ‘dessert-only’ food retail outlets: a mixed-methods study

Objective:
To understand how consumers use ‘dessert-only’ retail food outlets which represent one of the UK’s top ten growing retail business categories and a high-street source of energy-dense, low nutrient foods.
Design:Responses to open-ended questions about dessert-only restaurant usage and closed-ended questions about demographic information including frequency of use and BMI were collected.
Setting:Online questionnaire launched from the UK.
Participants:Totally, 203 participants (female = 153; mean age = 33·5 years (sd = 14·2); mean BMI = 25·05 kg/m2 (sd = 5·29)) assisted with the study.
Results:Quantitative results showed that participants used dessert-only restaurants infrequently, and qualitative results showed that they regarded a visit as a treat. Many participants also described ways that they modified their eating pattern to accommodate a visit. Thematic analysis also showed that consumer visits were influenced by properties of the foods on offer, opportunities for socialisation (especially with children) as well as convenience, price and a perceived relaxation of meal-time ‘rules’.
Conclusions:Despite some media opinion, this type of food retail outlet is being used somewhat judiciously by consumers. A fruitful public health focus may be on the management of treats within the broader context of the diet as opposed to targeting the treat itself, this may be especially helpful for parents/caregivers taking their children out for a treat to a dessert-only restaurant.

During 1990 we surveyed the southern sky using a multi-beam receiver at frequencies of 4850 and 843 MHz. The half-power beamwidths were 4 and 25 arcmin respectively. The finished surveys cover the declination range between +10 and −90 degrees declination, essentially complete in right ascension, an area of 7.30 steradians. Preliminary analysis of the 4850 MHz data indicates that we will achieve a five sigma flux density limit of about 30 mJy. We estimate that we will find between 80 000 and 90 000 new sources above this limit. This is a revised version of the paper presented at the Regional Meeting by the first four authors; the surveys now have been completed.

Conventional wisdom is that inflation makes people spend money faster, trying to get rid of it like a “hot potato,” and this is a channel through which inflation affects velocity and welfare. Monetary theory with endogenous search intensity seems ideal for studying this. However, in standard models, inflation is a tax that lowers the surplus from monetary exchange and hence reduces search effort. We replace search intensity with a free entry (participation) decision for buyers—i.e., we focus on the extensive rather than intensive margin—and prove buyers always spend their money faster when inflation increases. We also discuss welfare.

INTRODUCTION
We study the effects of inflation in models with various trading frictions. Our economic environment is based on recent search-theoretic models of monetary exchange following Lagos and Wright (2005), in that trade takes place periodically in both centralized and decentralized markets. However, following Rocheteau and Wright (2005), we extend previous analyses of that framework in two ways. First, by endogenizing the composition of agents in the market, we analyze the extensive margin (the frequency of trade) and the intensive margin (the quantity exchanged per trade). Second, we study several alternative trading or pricing mechanisms, including bargaining (as in previous studies), but also competitive price taking and price posting. The main contribution here is as follows: In Lagos and Wright (2005), the welfare costs of inflation are found to be considerably higher than in previous estimates. But in Rocheteau and Wright (2005), we show qualitatively that this conclusion can depend critically on the assumed mechanism. Here we ask, how much? That is, we study the quantitative effects of inflation under the different mechanisms.
To do this, we present a version of the framework that is simple enough to take to the data, yet general enough to capture some of the key ideas discussed in the relevant literature. One such idea is that the frequency of trade should be endogenous. We use something like the standard matching function from equilibrium search theory to capture the time-consuming nature of trade and how it depends on the endogenous composition of agents in the market. Modeling the extensive margin explicitly is important because inflation may affect it differently than the way it affects output along the intensive margin.

Peter Diamond is one of the major contributors to economics during the last half century. His many contributions include research on growth, Social Security, public finance more generally, the economics of uncertainty, search theory, in particular, and economic dynamics, in general. This work has shaped the way we think about many economic problems, and the way in which we formalize them. Among his long list of honors and awards, he is a fellow of the Econometric Society, a Guggenheim Fellow, a Fellow of the American Academy of Arts and Sciences, a Member of the National Academy of Sciences, and a Nemmers Prize winner. The National Science Foundation has supported his work for the last 40 years. A recent check indicated 9 books and 132 published articles, and there are few signs of any slowdown.

Models of the exchange process based on search theory can be used to analyze the features of objects that make them more or less likely to emerge as money in equilibrium. These models illustrate the trade-off between endogenous acceptability (an equilibrium property) and intrinsic characteristics of goods, such as storability or recognizability. We look at how the relative supply and demand for various goods affect their likelihood of becoming money. Intuitively, goods in high demand and/or low supply are more likely to appear as commodity money, subject to the qualification that which object ends up circulating as a medium of exchange depends at least partly on convention. Welfare properties and fiat money are discussed.

Atomistic simulation methods have been used to model the structure of the (1014) surfaces of calcite, dolomite, and magnesite under dry and wet conditions. The potential parameters for the carbonate and water species contain shell terms to model the polarizability of the oxygen atoms. These static calculations show that the surfaces undergo relaxation leading to the rotation and distortion of the carbonate groups with associated movement of cations. The dry surface energies are 0.322, 0.247, and 0.256 Jm−2 for calcite, dolomite, and magnesite respectively. The influence of water on the surface structure and energies has been investigated for monolayer coverage. When fully hydrated with a monolayer of water, the surface energy for calcite is reduced indicating a stabilization of the surface with hydration. The extent of carbonate group distortion is greater for the dry surfaces compared to the hydrated surfaces, and for the dry calcite relative to that for dry magnesite.

David Cass is undoubtedly one of the central contributors to modern dynamic economics. His fundamental contributions include work on optimal growth problems, overlapping-generations models, sunspot equilibria, and general equilibrium models with incomplete markets. His research has shaped in profound ways the manner in which we do both micro- and macroeconomics. From laying the foundations of real business-cycle theory via the Cass-Koopmans model, to providing us with general tools and techniques to analyze dynamic economic models, to furthering our understanding of monetary economics, to making fundamental contributions to the economics of extrinsic uncertainty, Cass's work has played a major part in the development of much of modern macroeconomic theory. In addition to being a first-class scholar, Cass is also truly his own man and a free spirit of the highest order.
In this interview, we tried to gain some insights into the story of David Cass and his approach to economic theory. Also, given the title as well as the intended readership of Macroeconomic Dynamics, we made a real effort to get him to discuss modern macroeconomics and the influence his work has had on its development. We edited out some parts of the discussion in the interests of space, but what remains is essentially unedited. As most readers will know, David Cass has collaborated extensively with Karl Shell over the years. We talked to Shell a few weeks after talking to Cass, and that interview is scheduled to appear in a future issue.
We met with Dave in his office at the University of Pennsylvania's Economics Department just before noon. Amid the boxes and piles of articles, books and CD's, he sat in his standard jeans and T-shirt, looking about as disheveled as he usually does. We chatted there for a while, went out and continued over lunch, and then returned to complete the interview several hours later. It was an unseasonably warm day in February, and Friday the 13th to be exact. That is traditionally an unlucky day, but one that turned out in this case to be a real treat, at least for us! We hope that you get as much out of this conversation with Dave as we did.
