Holstein-Friesian is dominant cattle breed in Hungary, so it plays an important role in beef production. That’s why it is important to know more about slaughter results and meat quality of this breed. As only little information is available in this topic Szabó et al. (2002) and Lengyel et al. (2003), the purpose of the study was to investigate some slaughter parameters and composition of various muscles of young bulls slaughtered at different ages.
